How do I cook fish and not make it taste like fish??

My husband and I are on the Miami Mediterranean diet and it calls for alot of fish. I'm really bad at cooking fish. (not including fried fish- I can do that I'm from mississippi) Baked or grilled. Is there a good marinade? What seasonings?? WE like tilopia and salmon.How do I cook fish and not make it taste like fish??
1 teaspoon salt

3/4 teaspoon paprika

3/4 teaspoon onion powder

3/4 teaspoon dry mustard

1/2 teaspoon garlic powder

1/2 teaspoon pepper

1/2 teaspoon cumin

1/2 teaspoon basil

3/4 teaspoon italian seasoning

4 (4 ounce) tilapia fillets

1/2 cup breadcrumbs

3 tablespoons sliced green onions

1 tablespoon dried parsley flakes

1 tablespoon olive oil



1. Preheat the oven to 450 degrees.

2. In a small bowl combine the spices from the salt through the Italian seasoning and set it aside.

3. In a shallow container mix the bread crumbs, dried parsley, and green onions.

4. Measure 4 tsp of the spice mix and sprinkle that all over the 4 fish fillets.

5. Add the remaining spice mix to the bread crumbs, mixing well. Add the olive oil to the bread crumb mix, blending it in with your hands.

6. Dredge the fish in the breadcrumbs, coating well.

7. Shake off any excess breadcrumbs.

8. Place the fish on a baking pan that has been sprayed with non-stick spray.

9. Bake for 6 minutes.

10. Turn over and bake for 4 minutes.

11. Turn over again and bake until flaky, about 4 more minutes.

This is what my Uncle always did. He deep fried his fish, and I am not kidding when I say that people came from all over to eat it. He even fried fish for wedding receptions. He even used mullet sometimes, and mullet has a very muddy, fishy taste if not prepared correctly.



Instructions:

The most popular way of frying fish is to deep-fry (375 degrees) or fry in a skillet in about 1" of oil.



Salt and pepper both sides of fish, spread mustard of your choice on the fish then dip in corn meal 鈥?flour 鈥?half cornmeal/half flour 鈥?dry batter mix (your choice although corn meal is best choice) and fry until golden brown.



Options:



Marinate fish in beer, milk or cream for about an hour before preparing (milk gives it a very nice mild flavor)



For thicker crust. Dip fish in mixture of 1 egg and 2/3 cup of milk before dipping in coating and cooking.
Paprika, cumin and turmeric are all good for BBQ fish (or baked). Have you tried salmon with hollondaise sauce? A few large egg yolks in a small saucepan, add salt and pepper and keep whisking on a low heat while you add an equal amount of butter a bit at a time for about 5 mins. Then add a teaspoon on lemon juice per yolk and whisk for another 2 mins. Or you can blend the lot then heat it up... or buy it pre-made. Serve it over new potatoes and asparagus with runner beans or sweetcorns and of course, salmon, baked or poached.



Look around for some fish marinades in a supermarket, you could try to re-create it using the ingredients on the label. Some chicken marinades might work well for cod or monkfish if you thin it out with plenty of lemon juice and an egg yolk if the lemon and marinade need a bit of help mixing together.



You could also make fish cakes and fish pie (white fish and prawns in a hollandaise sauce with a topping of mashed potatoes instead of pastry)



Edit: Talking of prawns, you could eat king prawns, crab, crab legs, lobster, cockels, shrimp, cray fish, mussels, oysters, squid, sashimi and sushi, scallops and clams.



Tinned tuna, salmon and crab meat is good on any salad. Kippers for breakfast if you want to get fish out of the way early in the day. You could bread your fish first (blend some crusty bread, cover the fish with egg white and lemon juice then roll the fish around in the bread crumbs and bake. Tuna steaks, shark, swordfish, they are more expensive but could make a nice change every few weeks.How do I cook fish and not make it taste like fish??
I like to cook salmon in salsa.

I have only used fresh, home made salsas when I have done this.

You can cook the fish in the oven, or out on the BBQ when you do this.

Lay the fillet on foil, coat it with salsa, wrap the fillet up in the foil.

The foil will help to maintain all of the moisture, so part of the cooking is actually done by poaching. You do not want your salmon to dry out!



The same concept would work with tilapia. You would probably want to use more exotic salsa ingredients, such as mango.
I hate fish. But I looooove salmon cooked this way.



For each salmon filet, season with salt and pepper on both sides (I have the fish guy take the skin off). Then generously season each side with paprika and oregano. Very generously season both sides. Heat a pan oven medium-high head and spray some cooking spray in the bottom. Pan fry the salmon until cooked to your desired doneness. It's sooooo good. Fry it and put some watercress sauce on.

Get a nice fillet of fish like a salmon fillet.

Sprinkle with salt and pepper on each side.

melt some butter in the pan and then fry them til theyre nice and brown on each side.

Then chop some watercress. Get a small pot of cream and about 3 spoons full of milk and mix and heat in a pan.

Put the salmon on the plate and poor the watercress sauce over.



If you dont like this sauce then some lemon juice with some water and cream make a yum sauce but i prefer the watercress one.
I love oregonato any thing, you make sure your seafood of choice is washed off, now mind you this is my way:

the night before, leave out what ever healthy bread you eat 2 slices, to get stale, then as you prepare toast it, then crush it and

mix together in a bowl, oregano 1tsp, pepper salt garlic, onion powder ,red peeper flakes a dash.drizzle a tiny bit of veg oil, light to bind it pile it on to your filets, and top them w/ red pepper slice. pre, blanched...{ boiled a bit} Bake On 425, Quick, so choose thin to med filets...
Oh, if you're doing talapia, you should coat it in Parmesan cheese, like you would flour for frying. Then you can pan sear it for about 2 minutes on each side. If you can't pan sear because of the diet, you can always bake it for about 10 minutes in a 350 degree oven.



It tastes outstanding and is really easy to make!

Gotta go with white meat to try and not be soooo fishy. Salt water not freash water. Try on the grill, that works well. My wife hates fish, but I ordered grilled wahoo at a restaurant near our house and I was fighting her off my plate, she likes grilled wahoo now, but thats about it. Just stay with white meat from medium sized salt water fish. Try wahoo, grouper, flounder or redfish.
im not a fan myself but any thin white fish wont taste that fishy. i put a piece on foil and i season it with salt pepper garlic lemon and a little breadcrumb then i top with chopped tomatoes and zucchini slices and seal foil pouch up tight then place on baking sheet and bake 350 for 20 minutes. make rice in the meantime
ok slit the fish down the middle(horizontaly) but leave a spine so its like a book.



stuff it with sliced tomato,onion,garlic,mixed herbs,chillies,bay leaf and sum salt and pepper and butter. rub the outside down with the same seasonings. do it no the grill or bake it ur choice
we wrap ours in but first marinade with good ole fashioned italin dressing and even sometimes use some catalina lightly or juice from and orange sprinkled with a bit of brown sugar all lightly so your fish tastas like fish
