Would I be missing something in my diet?

I am currently changing my diet because this seems to be the healthiest way I have felt with diets in the past and because I have always found the idea of consuming eggs and milk to be pretty gross. I am basically doing something similar to the mediterranean diet but exempting yogurt (NO dairy) and eating white meat twice daily. I am including a lot of carbohydrates because I don't really have to lose much weight (No need for weight loss) and because eating more carbs gives me more energy, typically. That includes potatoes, rice, whole grain pasta and oatmeal. No processed foods whatsoever, I make everything from scratch except hot sauce (That's a bit too much effort. It's just vinegar and peppers anyway) Olive oil is the only fat I use when cooking and I use light salt, if at all. No sugar except the natural sugar in fruit.

Would I be missing something from this kind of diet? I don't currently take a multivitamin.Would I be missing something in my diet?
I don't suggest not eating dairy prducts as they are vital for calcium
