I want to adopt a Mediterranean style diet. Any tips for learning to eat Greek in America?
Personally I believe that a Med diet consists in eating seasonal vegetables %26amp; fruit, eating a good amount of fish, use virgin olive oils and generally smaller portions of pasta and meats..... Greek food is actually quite heavy - very good but heavy.
The Mediterranean style diet is more than simply "Greek food." It actually refers to food eaten by all the peoples around the Mediterranean -- including Spain, southern France, Italy, and Middle East / North Africa. The Mediterranean Diet pyramid shows the basics. It includes a lot of breads and whole grains, nuts and seeds, olive oil, legumes, fresh vegetables and fruit, plenty of fish, some poultry; red meat and sweets are to be eaten sparingly. The primary things to remember, too, are to eat minimally processed food -- actual food instead of pre-packaged and pre-processed foods -- and preferably locally grown. This last part is hard to do in America, though sometimes you can get local food at a farmer's market, depending on the availability in your area. Locally grown foods here are not the same as there, of course, and olive oil generally has to be imported from far away. The lifestyle also includes a moderate amount of red wine (up to 4 oz. daily), and regular, daily exercise.

The exaggerations that, usually, are present in every topic, did not leave this question untouched.

The main secret of the everyday Greek cuisine, is the fact that all meals are done with the most fresh of the ingredients.

The use of olive oil is a must and the cooking of the meal is done in a slow process. The use of microwave is not acceptable.

The links below will give you a start to Greek cooking, but not the ultimate solution for a proper one.

One other point, is the constant exchange of ingredients. For instance, it used to be twice a week some kind of beans, like kidney beans, lentils, kernel beans done as soup. Once a week red meat, usually on Sundays. According to the season there were vegetables for two to three days and fish for at least one day.

The use of seasonings was not all that in effect in older times, with the exception of those found in the fields, collected and used by the the cooks. Garlic, onions, oregano, salt and pepper are used in almost any meal but olive oil is a definite must on all.

Use google to check Traditional Greek cuisine. Some sites are below.
