Mediterranean fare may include olives, antipasto, fresh cheeses, rice or pasta, fresh seafood, fresh fruits. Extra Virgin Olive Oil is definitely a staple. The meals consist of three courses, served separately and in normal, healthy portions. Very unlike the US where everything is supersized and piled high on large plates.
